Easy Moist Banana Muffin Recipe



A delicious way to save your bananas. No one can say no to this banana muffins
easy peasy soft, moist banana muffins recipe. don't through away your mushy leftover bananas.

you can use this batter to make banana bread or banana cake in a loaf pan but it will take way longer so I prefer to make muffins, it takes only 20 mins.


Ingredients:
All purpose flour 180g(1 & 1/2 cup)
baking powder 4g(1tsp)
baking soda 2g(less than 1/2 tsp)
overripe banana 330g (3 medium sizes)
sugar 68g (1/3 of a cup)
oil or butter 70g(1/3 of a cup)
egg 76g (2)
vanilla 3g (1tsp)
salt 2g (1/2tsp)

for my oven 20 mins at 170°C was perfect


Method:
* mash banana with a potato masher or fork til liquid
* add other ingredients
*at the end add sifted flour and mix gently
* pour in muffin tin and bake at 170°C for 20 mins or until done.

Notes:
* Don't over-mix the batter otherwise the muffins will be tough
* using oil keeps the muffins soft longer but butter gives more flavor, the choice is yours
* over-baking makes it dry. take out when you see a few crumb still sticking on the toothpick.so the baking will complete by the time it cools down.

Ingredients: For the meat sauce: 3 tbsp of olive oil a mix of basil, thyme, parsley, rosemary 1 tbsp or dry Italian seasoning 2 tsp 1 large onion 4 cloves of garlic 1 tbsp of chilli flakes black pepper ½ tsp salt to taste (around 1tsp )( remember that cheddar cheese is salty) ground meat 1 kg (beef or mutton) chopped tomatoes 800g water to cook for 30 minutes For bechamel /white sauce: butter 4 tbsp flour 4 tbsp pinch of nutmeg pinch of salt cold milk 3 cups Pan Size: 22 x 32 cm ....... one packet of instant/no-boil lasagna sheet or as needed grated mozzarella cheese grated light cheddar cheese grated parmesan cheese (optional) fresh mozzarella on top (optional) Time and temperature: bake at 200°C preheated oven for 35-40 minutes covered then uncover the lasagna and bake another 10-15 minutes to brown the top a bit. Carrot Cake Recipe/soft & moist -- Cooking A Dream

  You like carrots or not you will like this carrot cake. It's soft and moist, you don't really taste carrot in it. The orange flavour goes very well with it, This is my own recipe and this is how I like my carrot cake. but if you want to use vanilla, cinnamon, almond you certainly can.
